No Name Cake

This recipe has seen better days. I have no idea how it came to be so discolored and delicate – but I hope it means that it was a recipe that was made often. And a recipe made often must mean that it is good. It reads like another version of the earlier posted Pineapple Mandarin Cake. So now you have options!

No Name Cake

1 box yellow cake mix
4 eggs
¾ cup oil
1 can mandarin oranges (chopped) plus juice

Mix in a mixer according to cake mix directions (probably 2 minutes)
Flour and grease three 9″ round (or 8″) cake pans.
Bake at 350 degrees 15-17 minutes

Icing:
1 large can crushed pineapple in own juice
1 vanilla instant pudding/pie filling mix
1 large Kool Whip

Mix pineapple (and juice) and pudding with mixer. Fold Kool Whip before spreading on cake.

Yes. But I will substitute more mandarin oranges for the pineapple.

I have made this exact recipe before and it is divine. It is even better after it has sat in the fridge for 2 to 3 days. A wonderful summer cake!

I am surprised by how many cake recipes Millie had that were basically “start with yellow cake mix…”
And the pudding & cool whip as icing concept is so good.
