Because my mind is scrambled

I could not get to sleep last night. My mind was full of silly thoughts and the soundtrack to Annie. I suddenly realized yesterday that I no longer can remember the lyrics to that musical and I realized this in the middle of singing to W. In fact I can’t seem to remember the lyrics to most song lately. Which is why W hears the theme song for The Flintstones 30 times a day. Because, for whatever reason, that one is a lifer.

So last night I am in bed and clicking around channels and I suddenly stop because there is Sandra Oh talking about muppets on the daytime Emmy awards. And the curtain opens and there is about 40% of the cast of Sesame Street. (no Grover. lame.) And I get all emotional and start singing along to, “sing. sing a song….”

And then, oh my goodness, the puppeteers come out WITH their muppet and it was so cool. Happy 40 years, Sesame Street!

(And side note to PBS: please reconsider Reading Rainbow!!! Hold a telathon!)

Once the Sesame Street bit was over I clicked over to my saved food shows. There was Ina waiting for me with a show about breakfast. I watched 2 minutes of it and deleted it. Why? Because I saw she was going to cook some eggs and I learned on one of her other breakfast shows that Ina and I do not share the same philosophy when it comes to scrambled eggs. She likes them runny. I do not.

Which made me suddenly remember the lyrics to this Dean Martin song and I wanted to wake W up so that I could sing every single word to him, thus proving that I am cultured and knowledgeable in the key of crooner.

This morning I found the song on youtube and played it for the young lad and he wiggled his approval and then tried to type a letter. This is a skill he has learned from his Grandmother. He helps her apply for jobs when I need a break from the knee bouncing. So he is now all, “KEYBOARD!!!! I know what that DOES!!! Clacky! Clacky!!!!

Which brings me back to eggs. In case you didn’t click the link up there the song I can sing you is How do you like your eggs in the morning? It is sweet and silly and I’m sorry but it will be in your head for the rest of the day. (& I would link to the lyrics but every site I try has like a bajillion pop up ads & who needs that?)

But at least now we can talk about eggs. Because maybe there are people out there that like runny scrambled eggs. And because I like a good Monday poll you now get to tell me about your feeeeeeeeeeelings about eggs.

Scrambled is not my favorite, mostly because people make them too dry! I have to make my own. I don’t know that I’d call them “wet,” but they’re probably gross to you. ;-) To help keep them MOIST, I add milk and usually cheese. nom.

Once in a while I’ll do fried with still runny in the middle, I can never remember what that’s called, with hashbrowns but mostly I prefer scrambled and well done. My favorite egg dish came from IHOP a few months ago and it was cottage potatos, eggs, cheese sauce, bacon all mixed together and was yummy. I’ve tried in vain to recreate this and have so far been unable to. Damn.

Not a big fan of eggs at all but I LOVE LOVE LOVE deviled eggs. I could eat them every day.

I voted but I don’t think my vote is really fair, considering that I love eggs so many different ways. I just love eggs. I love them hard boiled, over medium, baked, poached, scrambled (dry!), really any which way.

Ok, let’s differentiate between “wet” and “runny” scrambled eggs. When I make my scrambled eggs, I add a little milk to them. Why? I have no clue, but my mom does, and so I do. It does keep them a little fluffier but you have to let the milk cook off so they’re not WET. But I don’t do “runny” scrambled eggs… the yolk and everything else must be cooked.

my favorite is Mexican style eggs, either a version of chilaquilles that we make (lightly pan-fried corn tortillas to which we add eggs and scramble it up) or machaca (leftover turkey or pork with maybe some onions and scrambled into eggs)… also, eggs always taste better when someone else makes them!

oh and to the Michell above: “fried with still runny in the middle” ~~ these are what i grew up with calling “Dippy Eggs”, because…you dip your toast in the yolk.

I voted for soft boiled, since that is one of my favorite ways to eat eggs straight up, but hands down, my favorite egg dish is my dad’s cheap carrot quiche. Here’s the recipe, from memory, so hopefully no glitches or omissions:

You can use any non-sweet pastry for the crust, although the lazy method is to butter the quiche pan and then crush up some saltines and shake them all around so they stick to the butter. It makes a crust of sorts, plenty tasty, and is way easier than making pastry.

6 eggs, beaten
2 c. cottage cheese
1 c. cheddar or other flavourful cheese, cubed
a few carrots, cut into sticks and parboiled (I microwave for a few minutes until lightly cooked)
1/2 c. onion, sauteed until transluscent
pepper, nutmeg and basil to taste (I love the nutmeg, so I use about 1/2 tsp. freshly ground or so)

Mix the eggs, cottage cheese, pepper, nutmeg and basil, and set aside. In your chosen crust, arrange carrots like the spokes of a wheel. Sprinkle with the sauteed onion, and then with the cubed cheese. Pour the egg mixture over the top. Bake at 450 for 15 minutes, then reduce heat to 375 and bake for another 20-30 minutes, until center is set and top is golden.

Mmm. I made this last week it was so, so good – total taste of my childhood. Obviously you can experiment with other fillings than carrots – anything you like, really. If you are using spinach or other watery veggies, cook first and get some of the water out or it gets a bit runny.

Oh, and I didn’t comment before, but I LOVE your new shoes. Spiffy!

My favorite eggs are fried over medium. Still with a runny middle, but a totally firm white. If it is scrambled eggs, I do them with one piece of American cheese per egg. Then I cook them firm. Poached eggs are also quite good and so are soft boiled. (Yum, traveling in Europe, I got a lot of really good soft boiled.) And I just had a really good Eggs Benedict in Vegas.

Best egg dish EVER is Alton Brown’s scrambled eggs. I believe they are also sometimes called French eggs. They are scrambled in a metal bowl set over boiling water. It’s an awful clean-up, but the eggs are so fluffy and gorgeous and they stay hot for a very long time.

But I voted “other” because I like over-medium. White fully fully fully cooked (cannot handle it if there is any uncooked white) and yellows runny.

Runny scrambled eggs creep me out. Ew. They just have to be cooked. I can do over medium fried eggs, and my poached eggs can also be over medium, but anything else has to be fully cooked. It’s positively the worst when I order an omelet and there is some undercooked element on the inside. *shiver* If there’s one thing I can’t handle it’s underdone eggs. Make them crispy if you have to, but don’t undercook them.

I love omelettes, with any kind of veggies and cheese especially. Here in Cairo most people when they scramble an egg they serve it runny/wet, YUCK!

I marked other, but probably should have marked the eggs are gross box. But I eat scrambled tofu instead of eggs, and like it far better.

I’m with LC. Scrambled with cheese.

I do like a nice omelette every once and a while. Runny scrambled eggs, I would vomit. Yuck!

Because I also cannot remember the song to children’s songs, I have started making songs up. Each of the kids has their own song where I spell their name out, and A insists that I go through and sing them atleast once a day.

French toast, the best way way to eat a breakfast egg, or is that cheating? Really soaked in the egg,cooked till the egg is done but not dried out and cooked in butter with just a slight drizzle of syrup.

I love my scramble egg (not runny!) to be mixed roughly in the pan (no mixing in a bowl beforehand).
Second way I love my eggs is sunny side up with toast and butter by it’s side. Here the yellow has to be somewhat runny (so can dip the bread in it..).
As a kid used to love soft egg [hadn't had that in like a million years], but only the yellow..

Oh, how could I have forgot?? Should have voted other, because the best way to eat an egg is of course what we call Shakshouka (http://en.wikipedia.org/wiki/Shakshouka). Basically you fry onions and tomatoes and peppers (can add other viggies) and then add the eggs. Some like to mix the eggs, I like to cover the pan and let the eggs cook, but not till hard boiled. And of course we will not forget the spices!

AMEN. i am still recovering from a 4th grade trauma involving a school parent/kid breakfast in which the scrambled eggs were *urp* how shall we put this…not done! *shivers*

Eggs are yummy. But song lyrics!! Where do they go?? I’ve been unable to remember most lyrics to most songs (particularly children’s songs) ever since Squeaker showed up — just when I need them most. Thank goodness there are so many muppet videos online … but I’m burning myself out on “C is for Cookie”…
