Today I am making this.
And when that cake is gone I will make this using peppermint ice cream.
Oh lawd ya’ll I’m in some weird stage of jobless situation depression. The crazy cake lady stage. But at least I am doing lots of substituting. (you know, using egg whites and switching out nonfat where I can and applesauce instead of oil.)
You know what else is hard? Being friends with poets. They send the best e-mails that make you weep with appreciation. Last night Dr. Molly e-mailed me the following:

Seriously. Make sure that in your roster of friends you have people that can say this kind of stuff to you. I feel like a marshmallow.
Oooooh man…. those both sound sooo good! And you must have done an incredible job of hididng some of your beloved peppermint ice cream to have kept it around this long!! Hooray that you have found a super yummy way to use it and treat yourself. And honestly, better a crazy cake lady than a stark raving bag lady – just something to keep in mind. Love you!
Hot damn, those cakes sound good. Being the ravenously hungry gal I am, I have the urge to start checking if there are any seat sales to where you are, just so I can come and eat your cakes. Oh, and visit you and W, too, of course.
