Next month let’s cook!

by on September 30, 2008

Hard to believe it, but did you realize that tomorrow is October? Pretty soon the the grocery store will be chock full of pumpkins and evil chocolate candy. And right on cue comes my need to spend lots of time in the kitchen. Last year I tried to make pumpkin ravioli. And in case you weren’t here for that gem of a moment you can read all about the yuk here.

This year I want to focus on things that are perhaps a bit more on my culinary level.  (um, not that I am really at a level. If this was karate I would be sporting a white belt.) So my quest is to become an amazing soup chef. woo hoo!

However, before I can move into the wonderful world of savory soups there is one more squash/pasta dish combo that I feel that I should try to make: butternut squash lasagna. I found recipes here and here and Marta’s awesome Mom once served it and I am begging for her recipe. But what I want to know is if you have ever made this before and if you have a SUPER easy recipe that won’t intimidate me. I’m thinking of making it this weekend. SO if any of you guys want to play along we can have a bake-off. I need a recipe by thursday afternoon as that is when my respite is here and I can go grocery shopping.

Will also want to start collecting your yummy soup recipes from you, so start mulling!! E-mail me original or family favorite recipes and I will compile a big post to publish mid October. Maybe we can get enough recipes put together to create a community cookbook.

p.s. Because so many of you asked- I selected cherry as the flavor to add to GM’s antibiotic. It smells like cough drops but it goes down nice and smooth. Phew!

I’m with you, this time of year puts me into ultimate cooking mode. And, being that I recently lost my job, the cooking mode has been allowed to go into high gear. In the last 3 weeks I’ve made dinner almost every single night as well as canned a bunch of stuff (yes, I’m a garden dork) and even made bread. I would love to see everyone’s recipes and will get some of mine together to share too.

OOH fab. How about squash soup (with chilli and creme fraiche) or squash and leek risotto? I LOVE both. Umm, what do I do about the recipes? Email me if I’ve tempted you and I’ll see if I can find them! xx

I don’t do lasagne… there are some things that are just beyond my abilities… BUT We LOOOOOOOVVVVEEEE soup season and here are our favorite soup recipes:

Vegan corn chowder (which I have no idea how to convert back to non-vegan): http://www.calorie-count.com/recipe/12886.html

and

potatoe soup, my recipe is vegan, (to change it back: use cow’s milk and pork sausage instead of soy replacements, and chicken broth instead of vegetable)
http://www.calorie-count.com/recipe/12887.html

The second one is my absolute favorite food! (If you try them, I must know how it turned out)

For a second I thought you meant sous chef – like all Top Chef-y. I was confused. But I get it. :)

No fancy family soups (other than some kick-ass chili every now and then) but I think this Weight Watchers cookbook I have has butternut squash soup in it. I don’t do squash, so I ignored the recipe, but I will check it out for you tonight, if I can remember. :)

I have a good corn chowder recipe. We had the best corn chowder ever at our wedding and I have been trying to recreate it ever since. I’m close. Remind me and I’ll make it for Matt and I and do a post on it for you.

Yes yes! I hava made butternut squash lasagna and it was delicious! Here is the recipe I used, from Cooking Light: http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=698656

It was definitely time-consuming, but not especially difficult. I remember it involving lots of steps, but the steps made sense. And it goes without saying, I think, that I did NOT make my own marinara as the recipe suggests. Please. I’m sure I opened a jar of Ragu or something. Anyway, I’m no chef, so if I can rock it you can rock it. :)

I am not (not not *not*) the chef in the family. But I will ask Al for his recipes, they are yummy.

You’re pregnant and you can cook? Lucky. I couldn’t enjoy anything but popsicles (and, for a week, pad thai) for the past five months… now I’m sort of back in the saddle. Butternut squash lasagna is not easy – but if you have Trader Joe’s, go there & buy your squash all cut up in little cubes, that is crucial. A butternut squash is a big difficult animal to cut up, so skip that if you can. you need all your digits.

I start craving soups and such too. However I don’t really have any recipes that I use. I just start throwing stuff in a pot. Sometimes it’s great and sometimes it really sucks. Hope your lasagna turns out good. I’ve never heard of squash lasagna.

This is one of my favorite soup recipes. http://www.epicurious.com/recipes/food/views/SPICY-GARBANZO-BEAN-AND-TURKEY-SAUSAGE-SOUP-458

Really easy, and so yummy. Double the recipe and freeze it in small batches.

I just emailed my mom to ask her what recipe she used…I bet it was Cooking Light, though (the one your friend posted above). My mom uses their recipes all the time and they are the bomb.
